Who knew you could have porridge cold? I didn’t until I tried this! That does mean it’s not exactly warming on a winter’s morning, as it’s refrigerated overnight. But it is still somehow refreshing and there’s a perfect window of opportunity as spring starts to break through winter, when it’s lovely to have in the mornings.
This is a really simple recipe; the most complicated bit is remembering to do it the night before!
- 40g porridge oats
- 2 tbsp desiccated coconut
- 2 tbsp chia seeds
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp freshly ground ginger
- a couple of drops vanilla essence
Obviously you can temper the ratios (or even the actual ingredients) depending on what spices you and strength of flavour you prefer. The original recipe that inspired me also suggested cardamom, but as I’m not a fan I left it out completely.
Pour in about 200ml of milk of choice (I used almond but coconut would probably go slightly better), cover with clingfilm, and refrigerate overnight.
You can also have this warm but it’s not nearly as nice – I found the combination of flavours was a bit lost and it just wasn’t as refreshing as having it chilled.
