This is definitely one of the more ‘out there’ recipes, but I’m putting it up because I’d recommend giving it a try!
The parfait texture (i.e. set) is created by soaking the chia seeds in liquid overnight, which has the same setting effect as eggs can have.
This recipe is a really versatile idea; you can use it for a breakfast parfait or as a dessert. And while it’s certainly not heavy, I find it just as filling as a high protein (omelette and/or fish) breakfast and it definitely beats porridge at keeping me fuller for longer!
The initial idea was based on a recipe from skinnytaste (which definitely has a better photo of it!) but I’ve gone with cherries and lime as I think that’s an equally winning combination, and I had some cherries helpfully tucked away in the freezer. If you can use fresh fruit it would probably be that bit tastier, but as you have it overnight in the fridge, I think frozen fruits work just as well.
You may need to temper amounts based on your portion and serving ware size(s), but generally what you need for one person’s breakfast is:
- 10 cherries (or fruit of choice – can be frozen)
- 2 tbsp chia seeds
- 1 tbsp shredded coconut
- 2 tsp cream of coconut
- small glass of milk of choice (I used unsweetened almond milk)
- juice and zest of a quarter of a lime
All you have to do is add your ingredients into your serving ware, mix them gently but thoroughly together, and leave overnight in the fridge to set.
Try it – either as breakfast or dessert, just make sure you give it enough time to set!
