Well, I’ve kind of given you the recipe in the title…!
We occasionally have a simple fresh veg tortellini – cook the tortellini for all of 3 minutes, then flash fry some cherry tomatoes and thinly sliced red onion then turn the heat off and add the drained tortellini back in the pan with some rocket. That’s usually the finished dish.
However, one evening when we were looking to ramp up the protein, we had the idea of grilling a chicken breast and frying an egg, and adding them to the plate as well. You can see from the photo that’s exactly what we did!
It was perhaps a teensy bit dry but you could easily get round it easily with some dressing or sauce – and the flavours and tastes went really well, particularly if the egg yolk is still runny!
