Salmon and greens

This is more a meal idea than a recipe, as you can easily switch around the sides depending on preference and diet. You’ve probably guessed the recipe by the photo, but I’ll give you some more details.

  • the salmon is cooked in tin foil (or baking parchment) with a light spray of oil and seasoning, with fresh rosemary added to the cooking parcel. Cook it in the oven for about 20 minutes
  • To make the greens (also known in Spain as the slightly more exotic “almondines”), steam some green beans, and lightly fry some sliced almonds to give them a bit of colour. When the beans are cooked, add them to the almonds in the frying pan and quickly fry them with a little butter and seasoning
  • Make couscous as you normally would – (or) mix 200g couscous with 300ml stock, and leave it covered for a couple of minutes. Then uncover and fluff up with a fork.

Et voila! You should have a meal resembling mine in under half an hour!
