I got the inspiration for the chicken kebabs from popularpaleo.com but I’ve included the whole meal I made below – it’s great for a weeknight meal as it’s very little effort, no need to marinate for hours on end, and quick to put together as well.
Ingredients (for 2):
3 chicken breasts, skinless
1 tsp garam masala
1/2 ground coriander
1/2 tsp salt
1 tsp fresh lemon zest
1 tsp grated ginger root
pinch of red chilli flakes
1 red onion
and ingredients for a salad (I used lettuce, cucumber, spring onion and tomato)
Some kebab skewers
What to do:
1. Mix all the spices together. Cut the chicken into kebab sized pieces (about 2 cm squared) and mix the spice mix into it, covering as much as possible. Set to one side
2. Chop the pepper and onion into kebab sized pieces. At this point I sprinkled some oregano over the pepper for a bit of variety and contrast to the chicken.
3. Thread all the above onto skewers and put under a medium grill (or barbecue!) for about 20-25 minutes, turning at least once for even cooking.
4. While they’re cooking, prepare your salad.
Note: While the spice mix was really nice, I’m sure you could add any combination of spices (i.e. fennel and lemon zest for example) and it’ll still be pretty tasty!
