This is a great weeknight meal because it’s low effort and quick. You just make a jerk seasoning/marinade but it doesn’t need to be marinated for any time at all (though you can for added flavour) – you can just cook it as soon as you’ve made the seasoning.
The recipe was from Fitter Food although I made a couple of changes to their recipe when I made it.
To serve 4, you need:
4 salmon fillets
1 tsp allspice
1/2 tsp cinnamon
1/2 ground cumin
1 tsp cayenne chilli powder
1 tsp smoked paprika
2 dice sized cubes of ginger, peeled and very finely chopped
2 cloves garlic
1 level teaspoon salt
juice of 1 lime
2 tbsp coconut oil
and whatever you want to serve with the salmon. We had some cavolo nero and cauliflower rice, which I’m not sure was the perfect combination …
What to do:
1. Preheat the oven to 180C/350F/Gas Mark 4
2. Melt the coconut oil and mix all the ingredients together (except the salmon) to make the jerk seasoning.
3. Once the jerk is well combined, coat the salmon then place in a baking tray. Pour any remaining marinade over the salmon and then cook for 20 – 25 minutes.
4. Prepare any side dishes as needed.
