A coleslaw that is completely mayo free and – amazingly – still delicious!
About 4 portions
– half a red cabbage
– 3 or 4 carrots
– at least haf a red onion
– handful of seeds
– 1 tbsp oil (olive, Udo, whatever takes your fancy)
– 2 tbsp vinegar (I used red wine)
– 1 tbsp of sweetener (I used agave nectar)
Mix all ingredients together, and ideally refrigerate overnight.
Great for lunchboxes, or you can also have it with something like jerk chicken or even steak. You can play around with the base recipe as you like – for an eastern twist maybe add sultanas, for a protein hit add some chicken etc.
