So this recipe is based on Jamie Oliver’s 15 Minute Meals recipe, however as we’re not doing dairy or wheat, I left the feta and bread elements out.
To serve two people more than enough salad, you need:
175g green beans
6 black olives
about 2 large tomatoes (or 1 large, and some cherry tomatoes)
1 lettuce – either romaine or iceberg
And then for the protein:
1 bunch fresh basil
6 anchovy fillets
2 tbsp extra virgin olive oil
about 300g fresh tuna steak
1 tbsp red wine vinegar
1 tsp wholegrain mustard
1 tsp runny honey
Prepare a pan of boiling water.
1. The dressing/marinade:
Remove about 10 springs of basil, then tear off the rest of the leaves and put them in a blitzer along with:
- lemon juice
- olive oil
- splash of water
Then distribute the marinade/dressing as follows:
- Put about 40% into a service platter
- Then 10% on the tuna as a marinade (both sides, then season)
- And the rest into the salad bowl – and add in the vinegar, mustard and honey
2. The salad
Chop the olives, tomatoes and lettuce and add to the salad bowl
Put the beans in the boiling pan of water
3. The tuna
Heat a griddle pan and cook the tuna for about 2 minutes each side. It should still be blushing in the middle when done.
The beans and tuna should be done about the same time, so drain the beans and add to the salad and transfer the tuna to the serving platter that has 40% of the dressing in.
