Sloppy Joe Meatballs

This recipe works by first making the meatballs and baking them in the over, then while they’re cooking, preparing your sauce. So the ingredients are ordered in this way.

The recipe below serves 6.

For the meatballs:
butter of the pan
1 onion, diced
900g minced beef
2 tbsp Worcestershire sauce
2 tbsp cider vinegar
salt and pepper to taste

For the sauce:
800g tomato sauce
1/2 cup water
2 tbsp tomato puree
2 tbsp Worcestershire sauce
1 tbsp cider vinegar
1/4 cup roasted red peppers, diced
1/2 cup of some kind of sugar (the original recipe said coconut sugar, I think I probably used dark or muscovado sugar

What you need to do:

  1. Preheat the over to 180C
  2. Melt the butter in a pan over a medium heat. Add the onion and saute until cooked through.
  3. Combine the rest of the meatball ingredients. Once the ingredients are cooked, add half to the meatball mixture and keep half aside to cooked with the sauce.
  4. Form the meat into balls and place on a baking sheet and bake until cooked through. This obviously depends on the size of your balls, but should be about 20 minutes.
  5. While they’re cooking move onto the sauce. Add the sauce ingredients to the onions in the pan and simmer the sauce while the meatballs bake in the over.
  6. When the meatballs are done, cook them softly in the sauce for a few minutes to warm them up and mix the flavours – then go ahead and serve up with your side of choice – rice, pasta or even zoodles!
